SONG OF INDIA RICE
Inspired by Frances Moore Lappe’s recipe

1 Tb olive oil
1 Tb curry powder
½ c cashews and raisins
1 onion, diced
1 apple, peeled, cored, and chopped
3 c cooked brown rice and soy grits (1 ¼ c uncooked rice, 2TB soy grits)
Salt and pepper to taste
Fresh cilantro, chopped
Fresh parsley, chopped
Yogurt

Heat oil and sauté curry powder, cashews, raisins, onion, and apple. Add rice and grits and salt and pepper and mix well. Serve with cilantro, parsley, and yogurt.
